Turkey Taco Bowl

A quick & easy meal that can be thrown together in less than 30 minutes. This turkey taco bowl recipe combines lean ground turkey, cauliflower rice, salsa, corn, and black beans. Add your favourite taco toppings for all the extra flavour you could want and need in a simple meal prep!

These Turkey Taco Bowls have become one of our favourite meals to have on hand, and they’re excellent for meal prepping. They’re flavourful and customizable, as you can add in any of your favourite toppings or keep it simple with a cute dollop of sour cream or plain Greek yogurt (yes, you can use plain Greek yogurt in place of sour cream – I highly recommend it!).

If there is anything I love about food, it’s layers. I am huuuuge fan of toppings. Load it up. I love combining flavour profiles and textures. I guess that’s why we’re here, right? That’s what creating in the kitchen is all about… And I’m all about it! Plus, the mixture of a hot taco bowl, combined with cool and creamy toppings is just perfect. I promise you won’t be disappointed. 

So what are my favourite toppings? I absolutely have to top mine with sour cream, cheddar cheese, tomatoes, black olives, and avocado. I’ve added in a couple of other optional toppings that you can use if you so desire, but those five are my faves for this taco bowl.

Essential ingredients . . .

Ground Turkey: I’m a big fan of ground turkey. As I say in any recipe, feel free to use whatever kind of meat you prefer! Whether that’s ground turkey, chicken, or beef, or even chicken breast or tofu. Season the meat to your heart’s desire – salt, pepper, chili powder, and cumin are a great combination for that spicy taco kick.

Cauliflower Rice: I buy frozen bags of cauliflower rice to use specifically in taco bowls and stir fry. Sometimes, I will make my meals with a mixture of brown rice and cauliflower. You can definitely make your own cauliflower rice at home with a fresh head of cauliflower.

Corn: If it’s summertime and you can find fresh corn on the cob, please don’t hesitate to use it in this recipe! I use a can of corn for convenience since I always have some ready and waiting in my pantry. Canned goods are a lifesaver for meal prepping. 

Black Beans: Again, I take the convenient route here and buy cans of black beans. Just rinse in a colander under cool running water for a few minutes, and they’re ready to throw into a pan! No need to soak them for hours or overnight. However, you can use dried black beans if that’s what you prefer working with.

Bell Peppers: Any way I can add more fresh veggies into my meals, I will! I love bell peppers and I find they give the taco bowls a nice flavour and colour. These are optional if you don’t like/have peppers. I like to use yellow or orange bell peppers for a sweet and crunchy flavour.

Salsa: I used to use crushed tomatoes in place of salsa in these bowls, and would add a dollop of salsa as a topping. Recently, I started cooking salsa in the ground turkey mixture, and the game has changed. It really brings the flavours together. You can always substitute the salsa for a cup of crushed tomatoes and add some extra seasonings to taste. Or make your own salsa!

Description

Turkey Taco Bowl – A healthy take on Taco Tuesdays! These delightful bowls are made with cauliflower rice, lean ground turkey, black beans, corn, and salsa. Plus any or all of your favourite taco toppings. Quick and easy to make for a weeknight dinner for the fam or weekly meal prep for two. 


Ingredients

  • 1 lb lean ground turkey
  • 340 grams cauliflower rice (1 bag frozen or you can rice your own)
  • 3 tbsp olive oil, divided
  • 2 bell peppers, sliced
  • 540g black beans (1 can)
  • 250g corn (1 small can) 
  • 440g salsa (1 jar)
  • seasonings: salt, pepper, garlic, chili, paprika, cumin (lots of cumin) / alternatively, you can use pre-made taco seasonings 
  • optional toppings: cheddar cheese or queso, sour cream or plain greek yogurt, black olives, tomato, avocado, jalapeño peppers, hot sauce 

Instructions

  1. Start by slicing up bell peppers into 1/2 inch slices. Set aside. 
  2. In a medium pan or pot, heat 1 tbsp olive oil. Add cauliflower rice, fresh or frozen. Toss with olive oil, add salt and pepper. Cover and cook until heated through, about 5-7 minutes, stirring throughout. Set aside. 
  3. In a large frying pan, heat 2 tbsp olive oil. Add ground turkey and season with salt, pepper, garlic (fresh or powder), and lots of chili and cumin powder. Cook 4-5 minutes until no longer pink.
  4. Mix in sliced bell peppers and saute for 2 minutes.
  5. Add in black beans, corn, and salsa.
  6. Simmer over low-med heat for 5-10 minutes, until peppers are soft and most of the juices have cooked off. Adjust seasonings to taste. 
  7. Prepare toppings – shredded cheddar, diced tomatoes, sliced avocado, etc. 
  8. To prepare the taco bowls, evenly divide cauliflower rice into the bottom of 6 bowls and follow up with your turkey mixture. 
  9. To eat right away – add your favourite toppings to the taco bowl and dive in!
  10. If meal prepping, do not add toppings until reheated and ready to eat. You don’t want to heat up the sour cream or cheddar. 
  11. Allow meal prepped bowls to cool before covering. Refrigerate up to 4 days.
  12. To reheat, transfer to a microwave-safe bowl if not already in one. Heat thoroughly for 1.5-2 minutes. Add desired toppings.

Notes

You’ll notice I don’t add measurements for spices/seasonings. I find everyone’s taste preference in these areas a little different. Season to your heart’s desire, taste test, and add whatever you need as you go along. I will say, for these taco bowls, cumin and chili powder are your best friends! I use about 1-2 tbsp of each cumin and chili, and about 1 tsp of the other seasonings.
