Welcome to Coffee & Clementines – a blog space that will soon consist of countless recipes created inside my kitchen over the last decade and beyond.
First of all, I want to say thank you for taking the time to visit my newest creation, which might I say, is long overdue. Iโm so excited to start creating with and for you! The person behind the page . . .
Hey there, I’m Andi, 30 years old, and currently residing in a small city in Ontario, Canada. I live with my boyfriend, Dillon, and our four feline children: Theodore, Xena, Luna, and Suzie. My passions include yoga and meditation, health and fitness, video games, and all things food and drink.
About 10 years ago, I worked in a small cafe/restaurant in the downtown area. This sparked my curiosity, and I set out on a journey of self-discovery. I contemplated attending college for culinary arts, but it didn’t seem right at the time. I did, however, take an educational route through the University of Windsor and obtained my Bachelor of Science in Nursing and have been working as a Registered Nurse since 2018.
We all know that the past year has been an unpredictable rollercoaster ride for everyone, due to the ongoing pandemic and intermittent lockdowns and quarantines. One thing that has helped me maintain my sanity during these uncertain times has been food. Whether it was takeout pizza, baked goods from our favourite coffee shop, crafty charcuterie (a lot of charcuterie), or meal prepped zoodles and homemade chicken noodle soup for 3 days; the food was always there. And I made sure of it.
What to expect here . . .
For years, I’ve contemplated a food blog. If you know me in real life or have followed me on social media, you’ve seen my meals, and many of you have admired/asked for recipes. It only felt right to have them accessible for everyone.
Over the last few months, I embarked on a journey of creating this blog. What I thought would be a quick and easy task of writing recipes and posting them alongside a couple of photos, has turned into the most time-consuming and creative hobby I’ve ever had, and I couldn’t be more thrilled! The food blogging world is an incredible place and I’ve only just stepped in.
The recipes you’ll find on Coffee & Clementines will be a mix of healthy, nutritious, easy-to-make, and fun creations. In the future, I would like to create some blog posts relating to health, nutrition, and meal prepping. Currently, I am focused on posting all of my favourite recipes. As of now (April 2021), you’ll find a handful of delightful creations on Coffee & Clementines. I hope you enjoy what you see here, and continue to visit in the future.
Who knows where we will end up?
I am a huge advocate for health, nutrition, and fitness. I believe that taking care of your body and mind is so crucial to your overall well-being. It is so worth investing the time, money, and energy into yourself.
My health journey . . .
Like many of us, my journey in the kitchen started when I rented my first apartment at 20 years old, and realized I had an entire kitchen to myself. I bought all the utensils, cookbooks, accessories, and got to work! I made some good things, I made some bad things. Anything from chicken parmesan, omelettes, homemade pop tarts, and cake pops. I learned many new skills in a few years time, and realized just how much I loved being in the kitchen.
During my time as a university student, I learned all about meal prepping and tracking calories and macronutrients. I followed a pretty healthy diet consisting of fruits, vegetables, lean meats, and legumes. This is also when I started my yoga journey, but that is a story for another time.
The summer after I graduated, I was introduced to the ketogenic diet. I had instant thoughts of this diet is ridiculous; how could someone eat all this fat and be healthy? I could never give up bananasโฆ Well, there I was, August 2018, full-blown ketogenic diet. Bulletproof coffee, egg chalupas, bacon, and cookie dough fat bombs were giving me LIFE.
I continued to follow this low-carb high-fat diet for the better part of two years. I slowly weaned off keto and have pulled 10 years of knowledge and experience together to create a pretty wonderful way of eating that works for me. A combination of intuitive eating and everything in moderation has helped me to explore all types of food and drink, both inside and outside of my own kitchen.
What I hope to come of this blog space will be a mix of everything with a twist of my own fork. Expect meals such as turkey burgers, zucchini lasagna, and our famous egg bake, as well as some low-carb favourites like avocado brownies and chicken pizza crust.
