Apple Cinnamon Oat Pancakes
Making your own pancakes has never been easier! Load up your blender with eggs, banana, oats, greek yogurt, and brown sugar cinnamon caramelized apples for healthy, nutritious, protein-packed apple oat pancakes.
Breakfast is my absolute favourite meal to have at any time of the day. Some mornings, I wake up early enough to make a big fancy breakfast, but I’m not always the best morning person. Sometimes, I want a quick and easy breakfast that will keep me content throughout the morning. I know I keep calling all of my recipes quick and easy, but you literally don’t even have to stir the batter. It’s one step more than making a smoothie. So, I challenge you – next time you want to make a smoothie for breakfast, make these pancakes!
The reason I use a blender to make these apple cinnamon pancakes is that I don’t use any flour. Instead, I blend up some quick oats to create an oat flour base, and it’s quite delightful! I love oatmeal for breakfast and just the flavour of oats in general. I’m the kind of person that will choose an oatmeal raisin cookie over a chocolate chip.
I also love having chunks of apples throughout my pancakes. However, if you’re not a fan of chunky pancakes, you can blend the caramelized apples into the batter. Try this with some or all of your apples for some texture variance!
Not only do these delicious apple cinnamon pancakes whip up quickly, but they are great to make ahead and have tomorrow! They reheat well but honestly, I usually end up eating them cold straight from the fridge. Perfect for a grab-and-go type of breakfast! I enjoy them with or without maple syrup, as they’re already pretty sweet on their own thanks to bananas and apples.
These pancakes would also be great with other fruits like blueberries or peaches!

Description
Hearty and healthy apple oat pancakes, sweetened with banana, blended with greek yogurt and eggs for a protein-filled breakfast.
Ingredients
- 1 apple, diced
- 2 tsp butter, divided
- 1 tsp brown sugar
- 1 tsp cinnamon
- 1/2 tsp allspice
- 1/2 tsp nutmeg
- 1 banana
- 4 large eggs
- 1 cup quick oats
- 1/2 cup plain greek yogurt
- 1–2 tsp maple syrup per serving, to top
Instructions
- Dice apple into small chunks. You can peel the apples if you’d like (personal preference – I leave them on).
- Melt 1 tsp of butter in a small frying pan over medium heat.
- Add apples and toss in melted butter.
- Add brown sugar, cinnamon, allspice, and nutmeg. Toss until the apples are coated.
- Cover and let cook for 3-5 minutes, stirring often, until apples are soft. Set aside to cool.
- Add banana, eggs, oats, and yogurt to a blender. Blend until smooth.
- Depending on how chunky you want your pancakes, add some/all of your apples to the pancake batter and blend. Add remaining apples and pour into a bowl (easier to scoop from).
- Melt a small spoonful of butter in a large frying pan.
- Once bubbling, scoop 1/4 cup pancake batter into the frying pan.
- Cook for 3-5 minutes on each side, until golden brown.
- Top with real maple syrup and enjoy!
Notes
This recipe makes 12 pancakes using a 1/4 cup to scoop the batter. The pancakes turn out a decent size and if you use an extra-large frying pan/griddle, you can cook 4-5 at a time.
You’ll notice I don’t blend my oats into oat flour first. I like to have some extra texture in my pancakes, so I find blending all the ingredients together leaves some bits of oat flakes throughout. I sometimes even add in an extra spoonful of oats after blending! However, depending on your preference, you can blend the oats for a couple of pulses on their own to turn them into a powder. Then add the rest of your ingredients and blend!
Nutritional information does include 2 tsp maple syrup per serving, which accounts for half of the sugar content (~9 grams). The rest of the sugar is from the banana and apples with brown sugar. If you’re looking to lower your sugar intake, you can make the apples sans brown sugar, and find low/zero sugar alternatives to maple syrup. Or simple omit the syrup! They’re delicious either way.
